THAI VEGGIE NOODLES

If you are yet to encounter Kelp Noodles, then this dish will surely have you hooked! Here is a raw twist on a popular Thai dish with delicious dressing, utilizing kelp noodles neutral taste, unique texture and rich source of trace minerals making them the star of this dish. Teamed with tasty fresh ingredients that come together in one satsifying, creamy, noodley feast!
INGREDIENTS:
Noodles Mix:
3 Courgette
1 Red Bell Pepper
1 Spring onion
1 Packet of kelp noodles
½ Cup Chopped fresh Herbs (mint or basil)
½ Cup Chopped Coriander
2 Tbsp. Lime juice
2 Tbsp. Coconut Amino's (or Tamari/soy sauce)
¼ tsp Himalayan Salt or Sea Salt
Thai dressing
¼ Cup Raw Almond Butter
1/4 -1/2 cup Filtered Water or Coconut Water if available.
1/3 Cup Coconut Creme (If not available use Cashews instead, soaked 4-6 hours)
1 Whole lime and zest
2 Tbsp. Fresh Ginger (grated)
2 Tbsp. Coconut Aminos (or use Tamari or Soy Sauce)
2 Tbsp. Sesame oil
1 Tbsp. Coconut Nectar (or other liquid sweetener)
2 tsp. Kelp powder
1 Chili
optional: 1 lemongrass stalk
Garnish: Extra Corriander, handful of Raw Cashews
DIRECTIONS:
For the Veggie Noodle Mix:
Prepare the courgettes into noodles either using a mandoline or a spiraliser. Alternatively use a veggie peeler which will produce fettucine like strips which you can then slice into thinner strips if desired then transfer to a mixing bowl.
Rinse the kelp noodles if you are using these and transfer to the mixing bowl along with the courgette noodles.
Julienne (slice into thin strips) red bell pepper and add those to the mixing bowl aswell.
Toss in the Lime juice, aminos and salt and massage gently into the mixture. When well combined set aside while you make the dressing.
For the Thai Dressing:
Place all ingredients in a blender or food processor (fitted with the 's' blade) Blend until creamy.
Pour the dressing over the noodles mix
Add the herbs and spring onion
Toss noodles and dressing well until well combined
Garnish with some coriander and raw cashews.
This dish can be served straight up but if you can allow the mixture to marinate at room temp for at least 30min or place in your dehydrator or oven on low, for an hour to warm, the flavours will develop and it's all the better.
