Irish moss (also known as Carrageen), is a raw, un-processed seaweed wonder! Irish Moss is an atlantic red sea plant that acts as an emulsifier and thickener when processed with water and is quickly becoming a staple ingredient in raw gourmet cuisine. Irish Moss will make any recipe fluffy, adding volume and super smooth and creamy lusciousness to puddings and sweets creating a very similar texture to the cooked counterpart.

In Ireland, this short, bushy, red sea plant was traditionally boiled with milk and sugar to release the gelling agent (carrageen), then cooled to form a pudding, sometimes called "Blancmange."
The carrageen extracted from Irish moss is used worldwide as a colloidal thickening agent in many foods and cosmetics.

    This stuff is great, very easy to use compared to the red stuff (chondrus) and is virtually tasteless. I whizz it up to make a gel and keep it in the fridge and stick it in all my smoothies because it thickens them beautifully and gives me a big wallop of minerals and a healing dose of soluble fibre to help my liver.
