RAW NUTLESS ICE CREAM

If you were to visit Peru, you may be surprised to find that lucuma flavored ice cream is more popular than vanilla or chocolate. Now it is becoming increasingly popular among people who enjoy a raw food, low sugar diet. Lucuma is a South American tree fruit that is gaining popularity as a healthy, whole fruit sweetener. It has a similar custard-ey taste to persimmon, and has a beautiful golden yellow color. Here is a simple recipe for this healthy and delicious frozen dessert.
INGREDIENTS:
-> 2 medium bananas (ripe)
-> 1/3 cup Lucuma Powder
-> 3 Tablespoons Coconut Creme
-> 3 Tablespoons Raw Coconut Oil (melted)
-> 1/2 cup water
-> 1 Tablespoon Raw Ground Vanilla
-> 1-2 drops Stevia Extract or Raw Coconut Nectar to taste (or other liquid sweetener)
DIRECTIONS:
Place bananas, lucuma powder, water, vanilla and stevia into blender and blend till creamy.
Next add in your coconut butter and coconut oil
And blend once again till smooth and well incorporated. It takes a few minutes!
Set your ice cream mixtures into the freezer and WAIT!!! If you can ;-)
We have found this to be good and ready at about 5-6 hours.
