COCONUT BROWNIE

If your looking for ways to ‘bake’ without the use of the oven. Try these healthy and all natural brownies that just pop into the fridge or freezer. These brownies are flourless, eggless, and 100% guilt free. A decadent sweet treat that can be whipped up within minutes. With a heavenly coconut frosting! This recipe is what we officially call a party in the mouth.
INGREDIENTS:
Base:
-10-15 pitted medjool dates
-1 cup walnuts
-1/2 cup Real, Raw Cacao Powder
-1 tea. Raw Ground Vanilla Powder or (pure vanilla extract)
Frosting:
-2 cups Raw Coconut Creme (or make your own by blending organic & raw shredded coconut for about 10 minutes)
-1/2 cup Raw Coconut Oil
-1/2 cup Raw Honey or Coconut Nectar
-1 tea. Raw Ground Vanilla (Powder) (or simply use pure vanilla extract)
Blend in food processor and adjust to taste and consistency. I tend to throw things in without measuring so you may need more coconut oil if it's not blending smoothly, or more honey and/or vanilla if it's not sweet enough for you (but the coconut butter makes it super rich so don't go overboard). Place back in freezer for 5-10 minutes to harden. Then put in fridge and take out 10 minutes before serving (made 9 brownies). Then prepare for and enjoy your raw foodgasm!
DIRECTIONS:
For the Brownie:
In a food processor (fitted with the 'S' blade) or blender, process the walnuts until chopped into tiny bits. It is ok if a couple large pieces remain. Depending on if you prefer larger chunks textures or a finer consistency.
Once you are happy with consistency, add all remaining ingredients, add a bit of water if too dry. Process until well combined and a dough ball has formed.
Then press into a lined square pan, 9x9 will work great for this batter. Or simple roll into balls or place into moulds of choice.
Put in freezer for 5-10 minutes to form while you make the coconut frosting.
For the Coconut Frosting:
Blend all ingredients in food processor and adjust to taste and consistency. If it's not blending smoothly enough add a touch more coconut oil, or more honey and/or vanilla if it's not sweet enough for you (but the coconut creme makes it super rich!)
Place back in freezer for 5-10 minutes to harden.
Then transfer to the fridge to chill and take out 10 minutes before serving.
Prepare for and enjoy your raw foodgasm!
