CHIA ACAI JAM
SUITABLE FOR: Raw, vegan, Soy Free, Gluten Free
Presenting...raw living jam! This tart, berry-licious jam is the end product of hydrating, gelatinous chia seeds teamed with berries that makes a sweet, fruity jam. This is a great spread on anything from homemade bread, crackers and one of my favourite breakfast sides. This healthy yet truly nourishing treat is loaded with raw superfoods to give you energy and vitality throughout the day.
3 tablespoons chia seeds
1/2 cup fresh apple juice
1 cup organic blackberries or raspberries (or berry of choice)
3 tablespoons açai berry powder
1 tablespoon fresh squeezed lemon juice
Coconut Nectar or other sweetener to taste
Soak chia seeds in apple juice until the juice is absorbed and the mixture becomes gelatinous.
Blend berries in a blender until smooth with a few chunks.
Add blended berries and all other ingredients to the chia seed mixture. Mix well. You can enjoy this jam right away or refrigerate overnight for best results.
It will keep fresh in a glass jar for up to one week.
